Tomato Basil Soup



This is a good one!!! Creamy and soooo yummy!!!

You will need:

1 large can of Tomato Juice
2 large cans of crushed tomatoes
12 to 14 fresh basil leaves
1/4 pound of unsalted butter
1 cup heavy cream
Salt to taste
1/4 tsp of pepper


Combine tomato juice and crushed tomatoes in large pot and simmer for 30 minutes. Remove from heat. Puree small amounts in blender while adding basil leaves a few at a time. After each amount is pureed pour tomato/basil mixture into another large pot. Return to stove top on med. heat; add butter and cream. Cook for about 15 to 20 minutes. You can serve with a salad and Grands biscuits. Enjoy!!!
